This fresh and vibrant coffee brings the delicious creaminess of raspberry ice cream and nougat while delivering a fruity punch one would expect from the anaerobic fermentation process. Perfect for early summer and already one of our favourites!

After the Sertão Group acquired the Fazenda Santa Inês in 1979, the estate underwent a major transformation. New coffee varietals were planted to complement the terroir, while advanced coffee processing infrastructure was established.

Sustainability and community upliftment are central pillars of Fazenda Santa Inês's operating philosophy and not mere buzzwords. From forest conservation to the provision of local public goods spanning water, electricity, healthcare, and nutrition, the estate is deeply committed to ecological wellness and social welfare.

This Acai lot has undergone a 72-hour anaerobic fermentation process, which involves fermenting coffee beans in an oxygen-free (anaerobic) environment. Following this, the cherries are spread out on raised beds and left to dry for 28 days until they reach the optimal moisture level. This technique has become very popular in the last few years due to the unique and complex flavour profiles present in the final cup.
