A Classic from Embu County
Kenya Gicherori AA continues our exploration of Kenya’s finest terroirs — this time from the southeastern slopes of Mount Kenya, in the fertile lands of Embu County.
Gicherori Factory, established in 1994, is part of the Kibugu Farmers Cooperative Society, alongside Kathakwa, Ndunduri, Gikirima, and Ngerwe factories. It serves around 1,200 smallholder farmers, each cultivating between 100–1,000 trees on rich volcanic soils nourished by approximately 2,000 mm of annual rainfall.
Cherries are handpicked at peak ripeness, then sorted, pulped, fermented overnight, washed, and sun-dried on raised beds. The result is a coffee that embodies the clarity, structure, and brightness that define Kenya’s washed profiles.
Processing Highlights:
- Sorting: Manual removal of underripe/overripe cherries
- Fermentation: Overnight, allowing mucilage breakdown.
- Washing: Density separation via traditional wooden shunts.
- Drying: 10–12% moisture target on raised African beds.
- Sustainability: Water recycled through soak pits; local biodiversity protected.
